Feeling nostalgic? How about a candy throwback? Read on for an insanely easy dessert-candy to try out this weekend! Remember those little coconut neapolitan candies?  We tried recreating the look of that dessert at home using an easy and yummy Indian coconut burfi base made with coconut flour. Check out the #recipe below. Seriously, this was so easy and quick to make (like 5-10 minutes easy), and it was even fun to do with a kid! 😁 🍴 Recipe 🍴: You'll need: 👉 1 cup of butter/veggie butter; 1 cup of sugar; 1 cup of coconut flour; 1/4 teaspoon salt; 1/4 teaspoon coconut extract (optional); 1 big handful of chocolate chips; 2 tablespoons of any berry jam Steps:  1️⃣ Over medium heat, melt the butter in a medium pot.  Once the butter has melted, add in the sugar, coconut-flour, salt, and coconut extract.  Cook for about a minute, stirring continuously and taking care not to let the bottom of the mixture burn.  Once the mixture is thick and heated through, remove it from the heat. 2️⃣ Divide the warm coconut batter equally into three separate bowls (about 1 cup each). While the batter is still warm, mix 2 tablespoons of jam into one part; mix a handful of chocolate chips into another part; and leave the third part plain. 3️⃣ In a medium square tupperware container or a lined square cake pan: first spread the chocolate coconut batter into an even layer and press it down well using the back of cup.  Repeat with the plain coconut batter, followed by the berry batter layer.  Cover and chill for a few minutes or until the candy has firmed up. 4️⃣ Carefully invert the pan over a cutting board and cut the coconut candy into cubes or your favorite shape! . . . . . . . . . #coconutdessert #throwback candy #neopolitan #quickcandy #quarantinecooking #feedfeed #realsimple #huffposttaste #coconut #chocolate #burfi #strawberry #buzzfeast #foodphotography #foodie #f52grams #easydesserts #candy #indiandesserts #cookingathome #eatathome #busymomlife #cookinghacks #eightiesstyle #coconutflour #busyvegetariankitchen

For some reason the word “cassoulet” came into my mind reminiscing perhaps over@the pre pork days when there was little better than various Parisian offerings. Couldn’t match the ingredients so went for chicken breasts and sausages. Potatoes, carrots, cauliflower, kidney beans, all got going in olive oil and then in chicken and sweet corn soup cooked slowly. Usual herbs and spices and garlic, especially ginger and chilli flakes. Made enough for two so I’ll have the other half probably on Sunday. I liked it.

Kuchen de Nuez 🍁 Cada vez que escuché; "...pero me sale más barato comprar la lechuga que producirla" guarde silencio 😶 Hoy, más que nunca nuestra huerta 🌱 nuestros árboles, nuestras gallinas y nuestro pedazo de tierra nos mantiene con cierta normalidad que da miedo. Mi rutina no ha cambiado demasiado, mi cocina tampoco; sencilla, sí!! Porque cuando cultivas tus propios ingredientes, sabes que la calidad está un simple trozo de Kuchen recién horneado ❤ • INGREDIENTES (para un molde de 20 cms. diámetro) ▪Para la base - 170 grs. (1 taza) Harina todo uso - 90 grs. Mantequilla - 30 grs. (2 cdas.) Azúcar - 1 gr. (1/4 cdta./1 pizca) Sal ▪Para el relleno - 397 grs. (1 Tarro) Leche Condensada - 60 ml.(1/4 taza) Leche - 2 Huevos - 285 grs. (2 tazas) Nueces en trozos • PREPARACIÓN 1.- Precalentar un horno a 180°C. Preparar tu molde en caso de no ser desmoldable, te sugiero usar papel mantequilla o encerado tanto en la base como en el costado. 2.- Para la base, mezclar la harina junto con el azúcar y la sal. 3.- Añadir la mantequilla, previamente cortada en cubitos y a temperatura ambiente para facilitar que se integre mejor y con ayuda de un tenedor o las manos, remover hasta formar un arenado. 4.- Verter sobre el molde y distribuir. Compactar con ayuda de una cuchara hasta obtener una superficie uniforme y refrigerar. 5.- En un bowl, mezclar con ayuda de un batidor de globo manual la leche condensada junto con la leche y los huevos hasta volver homogéneo. 6.- Añadir las nueces y remover para humedecer. Luego verter la mezcla sobre la base refrigerada y distribuir. 7.- Finalmente hornear por 55 minutos a 1 hora o hasta que el relleno esté firme, cuajado, dorado y que al insertar un palito en el centro, este salga completamente seco. 8.- Dejar enfriar a temperatura ambiente antes de desmoldar. Servir una vez frio y listo!! 🍁

~ Gluten Free Hot Cross Buns ~ This year is going to be a little different not being able to spend Easter with family.
