#goodmorning everyone! Even while #moving I still gotta keep our #sundaytradition, just with a few modifications. I thought I’d also share my #recipe. I’ve had it since I was a full on #hippy avoiding everything processed and using local spelt and minimizing animal products (at one point I was a #vegetarian, not vegan I like honey to much!)
I do a lot of things in my head and don’t write them down so I kinda tell you the recipe changes here.
I won’t bore you, but the humidity changes the way things bake. In #Manitoba our climate is dry most of the year so I usually use 1 1/2 cups of milk (dairy, almond milk, etc) when using all-purpose flour.
If you’re doing the #spelt #macadamianuts #vegan version you cut back on the liquid because spelt doesn’t bind together since it’s #glutenfree .
Now the important parts I do without thinking and never wrote down!
I skip sifting (it takes to long), I whisk the dry ingredients and make a well. I whisk my wet ingredients, then pour into dry while mixing.
Then you wait! Always wait to let the baking powder activate and create air pockets in your batter so your #pancakes are nice and fluffy. 🥞 .
I now also cook them over med-low heat. 😉
