Gudiya ki mummy ki recipe again ..from Etah !
Boil potatoes, and crumble a little with hands (loved this bit the most!). Crumble just a little ..not mash.
Heat oil. Very little oil. Splutter a sabut dry lal mirch, heeng, methi dana and jeera. I added some curry patas too (not in the original recipe). Stir. Add salt, lal mirch (I added some freshly roasted/ground dhania seeds too). Added some haldi as well ..though think Gudiya’s mummy is not too fond of haldi. She is a big fan of lohey-ki-kadai though - I could manage this one of mom’s regular kadai. So, splutter n mix those dry masalas ..and add the potatoes. Mix. Crumble any larger pieces with the kadchi. Careful ..no mashing. Mix. Done. Not sprinkled any garam masala. Maybe wont. Has its own aroma. Umm. .
Lunch this ..teamed with daal from last night. Or maybe raita? Vekhney ‘aan. And ..paranthas!! .
